South Beach recipie of the week

Ok, my favorite recipie this week happens to again be seafood. Weird cuz I don't really even like seafood that much, lol. They just happen to be the yummiest of the week...strange I know! Anyhow, without any further ado, here it is...

Broiled Salmon with Creamy Lemon Sauce

1 Tbsp. extra virgin olive oil
1 clove of garlic- minced
1/4 c. lemon juice
2 tbsp. capers (I didn't have any, and it was still yummy without it)
1 tsp. lemon pepper seasoning
1/2 c. fat free sour cream
1 1/2 pounds salmon fillet

Preheat the oven to 350 degrees. Coat a baking sheet with cooking spray.

Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low. Stir in the lemon juice, capers, and lemon pepper seasoning and cook for 5 minutes, or until heated through.

Meanwhile, place the salmon on the prepared baking sheet> Bake for 20 minutes or until the fish is just opaque. Serve with the sauce.

Makes 4 servings

(per serving) 368 calories, 22 g fat, 4 g saturated fat, 35 g protein, 5 g carbohydrate, 0 g dietary fiber, 100 mg cholesterol, 383 mg sodium
