South Beach recipe of the week

Yummy! This may be my favorite recipe so far. You seriously have to try it. It is more like a salad (sort of) but is really yum!

Peanut Chicken with Noodles

4 ounces soba noodles (if you can't find these you can use whole wheat spaghetti)
1 1/2 lb. boneless, skinless chicken breasts
3 tsp. dark sesame oil, divided (can use olive oil)
1/3 c. creamy trans-fat-free peanut butter
2 Tbsp. low-sodium soy sauce
2 Tbsp. rice vinegar
2 Tbsp. water
1 (3/4 pound) head napa cabbage, shredded (4 cups)
2 scallions, thinly sliced
Salt and freshly ground black pepper

Cook noodles according to package directions; run under cool water and drain.

Season chicken well with salt and pepper and toss with 1 tsp. of the oil. Heat grill pan or skillet over medium-high heat; cook chicken until browned and cooked through, about 4 minutes per side. Transfer to a cutting board.

Whisk together peanut butter, soy sauce, vinegar, water, and remaining oil in a large mixing bowl. Thinly slice chicken and add to peanut butter mixture. Add noodles, cabbage, and scallions; toss gently to combine and serve.
